Hi there! Easter is here, and this year I’m sure many of us celebrate a little differently. We may not travel as much, but get to spend the holidays with the people closest to us. That’s what we’re doing in our family anyway.
Good food we'll have during Easter too - and good pastries! Here comes a delicious recipe for a plant-based Mango Cake with lemon and white chocolate. It is easy to make and perfect for all the small coffee breaks during Easter. Scroll down for the full recipe!

Vegan Mango Cake
with Lemon and White Chocolate
Makes 1 cake
Ingredients:
100g white chocolate
Vegan dairy free margarine to grease the cake form
1 large, well ripe mango
1 tablespoon maizena flour
2 dl sugar
5 tbsp neutral oil
1 pinch of salt
2,75 dl oat milk
5,5 dl flour
2,5 tsp baking powder
Peel from 1/2 lemon, grated
2 tbsp lemon juice
0,75 dl almond shavings
Method:
Set the oven to 175 degrees.
Melt the white chocolate in microwave at low power. Let it cool slightly. Grease and sprinkle a round cake form with detachable edge, about 23 cm in diameter. Peel the mango and cut it into slices lengthwise. Turn the mango slices in the maizena flour.
Whisk sugar and oil until fluffy with an electric whisk. Add the salt and milk. Mix together.
Pour in the flour, baking powder and lemon zest and lemon juice and mix to a smooth batter. Blend in the white chocolate last. Pour the batter into the mold. Press the mango slices lightly into the batter and sprinkle with almond chips. Bake the cake in the middle of the oven for about 25-30 minutes.
It should be a little messy in the middle when removing it.
Let the cake cool down a little before serving with a click of whipped vegan cream.
The cake was clearly approved by the children! And don’t you love the napkins and kitchen towels?
